When I was a kid, macaroons were the not so amazing extremely dry cookies with huge chunks of coconut. But something happened, most likely I had better made macaroons. A while ago when I was hanging out in Samcheongdong (shocker) I noticed a little small cafe called Palette, shops come and go here in Korea so it’s never really too big of a surprise to notice a shop is closed or a shop appears. The cookie part of the macaroon is soft, moist with a consistent taste of coconut blended into the cookie instead of bits and chunks of coconut. I tried the Cinnamon macaroon and the Praline Mocha macaroon, both of which were delicious, sweet, but not overly sweet.
