So apparently in the Seoul public school system, there’s a bonus for schools who have low heating bills in the winter and low a/c bills in the summer, so of course the school that I’m working a two week Winter camp at is runned by a principal who wants that bonus, no matter how cold it is in the school. Seriously I worry about getting frostbite because even though it’s belowing freezing temperatures outside, the heater is turned off on the water too. So I have fun washing my hands.
Before I thought about what the temperatures would be like this winter, I thought that it would be fun for the kids to make no-bake chocolate chip cookies. However it was too cold in the kitchen classroom at Joongdae for the cookies to set. I felt so bad for the kids who were so excited to be making cookies, but ended up with unset cookies even after thirty minutes. 😦 But the kids still enjoyed the sugar and the cocoa, so it worked out in the end.
Quick Oatmeal Cookies
2 cups granulated sugar
1/2 cup butter or margarine
1/2 cup milk
3 tablespoons unsweetened baking cocoa
3 cups quick-cooking oats
1/2 cup chopped nuts
1 teaspoon vanilla extract
In a medium saucepan combine sugar, margarine, milk and cocoa; cook over medium heat. Bring to a boil for 1 minute; remove from heat and stir in oats, nuts, and vanilla; blend well. Drop dough by rounded teaspoon onto wax paper and let set before serving.
Makes 48 cookies.
