This past Tuesday was the Joseon Royal Culture class on royal food. We mainly focused on gol dong ban, basically royal bibimbap.
Gol dong ban is made from rice (of course), fried ground beef and shitake mushrooms, seasoned Chinese bellflowers, seasoned brackens (which apparently is the symbol of New Zealand), seasoned bean sprouts, and fried fish fillets.
An interesting fact from the class: on December 1st the cooks had to make new food for the king, so before then all leftovers had to be eaten.
It never seems to amaze me how many Koreans, particularly younger Koreans, that don’t really know how to cook. So it was interesting trying to teach the others on my team the basics of cooking, like thinly slicing mushrooms.
